Lemon Raspberry Cookies -Under 50 Calories

These lemon raspberry cookies are amazing! They are so fluffy and soft! The flavour is incredible! Each one is under 50 calories! You must try these!

Serves: 17 cookies. Prep time: 10 minutes. Cook time: 12 minutes. Total time: 22 minutes.

Ingredients:

2 cup oat flour

3/8 cup protein powder (25g protein)

1/4 cup 0 calorie sweetener (or sugar)

1 tsp baking soda

2 tbsp lemon juice

2 egg whites (or 1 flax egg)

1/4 cup water

1/4 tsp cornstarch

Topping: 1/3 cup raspberries (fresh or frozen)

Directions:

  1. Preheat oven to 360 degrees f. Line a baking sheet with parchment paper.
  2. In a bowl, mix together your dry ingredients. Add the wet ingredients after and mix well. Scoop out 1 tbsp of the dough and place it on the lined trey. Repeat with the remaining dough. Do not be concerned if the dough is liquid texture. Top with 1/3 cup raspberries.
  3. Bake for 12 minutes or until desired.
